Ingredients:

Ingredients Quantity
Unflavored gelatin 3 packages (about 21g)
Cold water 1 cup, divided
Granulated sugar 1 ½ cups
Light corn syrup 1 cup
Salt ¼ teaspoon
Vanilla extract 1 teaspoon
Powdered sugar For dusting

Instructions:

    1. Prepare the Gelatin Mixture:
      • Mix 3 packages of unflavored gelatin with 1/2 cup of cold water in the bowl of a stand mixer.
      • Let it sit while you prepare the sugar syrup.
    2. Make the Sugar Syrup:
      • In a saucepan, combine 1 1/2 cups of granulated sugar, 1 cup of light corn syrup, 1/4 teaspoon of salt, and the remaining 1/2 cup of cold water.
      • Stir over medium heat until the sugar dissolves.
      • Increase the heat and bring the mixture to a boil without stirring.
      • Use a candy thermometer to monitor the temperature until it reaches 240°F (115°C), known as the soft-ball stage.
