Orange Cake with Honey and Coconut Flakes

Ingredients 

For The Cake: 

  • 3 large eggs 
  • ½ teaspoon salt 
  • 200 grams (1 cup) sugar 
  • ½ cup vegetable oil (60 ml) 
  • 1 orange’s worth of freshly squeezed juice (150 ml) 
  • Zest of 1 orange, grated 
  • 220 grams (1 cup) all-purpose flour 
  • 1 teaspoon baking powder 
  • Drizzling honey 
  • Coconut flakes, for decoration 

Instructions 

  1. Step 1: Prepare the oven. Preheat it to 350°F (180°C). Use cooking spray or parchment paper to coat a 9-inch round cake pan. 
  1. Step 2: Combine the wet components. In a large bowl, whisk the eggs and a pinch of salt until frothy. Gradually add the sugar while whisking to achieve a pale and creamy mixture. While whisking, add the orange juice and vegetable oil, followed by the grated zest of the orange. 
  1. Step 3: In a separate bowl, sift together the flour and baking powder. Add the dry ingredients to the wet mixture. Gently fold the dry ingredients into the wet mixture until just combined to avoid clumping. 
  1. Step 4: Pour the batter into the prepared cake pan and level the top. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean. 
  1. Step 5: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. 
  1. Step 6: Once cooled, top with a drizzle of honey and a generous amount of coconut flakes. 
  1. Step 7: Serve and enjoy! This cake pairs wonderfully with a steaming mug of coffee or tea.
