  • 1 cup grapes, halved

  • 1 (8 oz) package cream cheese, softened
  • 1 (3.4 oz) package instant cheesecake pudding mix
  • 1 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • ½ cup coconut milk
  • 2 tablespoons honey (adjust based on sweetness preference)

For Garnish:

  • Toasted coconut flakes
  • Additional fresh fruit for topping

Directions:

  1. Prepare the Fruit:
    • In a large mixing bowl, combine the sliced strawberries, blueberries, pineapple chunks, mandarin oranges, kiwi slices, and halved grapes. Gently mix to distribute the fruits evenly. Set aside while you prepare the cheesecake mixture.
  2. Make the Cheesecake Mixture:
    • In a separate large bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.
    • Add the instant cheesecake pudding mix, Greek yogurt, vanilla extract, coconut milk, and honey to the cream cheese. Continue to beat until the mixture is thoroughly combined and smooth.
  3. Combine the Salad and Cheesecake Mixture:
    • Pour the cheesecake mixture over the prepared fruits in the mixing bowl. Gently fold everything together until all the fruits are coated with the cheesecake mixture. Be careful not to crush the fruits.
  4. Chill:
