Century-Old Apricot and Cottage Cheese Tart

Ingredients
For the Dough:

  • 300g (2 1/2 cups) flour
  • 60g (1/2 cup) powdered sugar
  • 5g (1 tsp) baking powder
  • 8g (1 tbsp) vanilla sugar
  • 120g (1/2 cup) cold cow butter
  • Grated rind of 1 lemon
  • 1 egg

For the Filling:

  • 10 apricots
  • 350g (1 1/2 cups) cottage cheese
  • 60g (1/4 cup) sugar
  • 100g (1/3 cup + 1 tbsp) yogurt
  • 30g (1/4 cup) natural starch
  • Juice of 1/2 lemon
  • 2 eggs
  • Sliced almonds (to taste)
  • Powdered sugar (for dusting, to taste)

Step-by-Step Instructions
1. Prepare the Dough
Sift and Mix Dry Ingredients:
Sift 300g flour60g powdered sugar8g vanilla sugar, and 5g baking powder into a bowl.

Grate and Rub Butter:
Grate 120g cold butter on a coarse grater, periodically dipping in the flour mixture to make it easier. Rub with hands until crumbs form.

Add Lemon Peel and Egg:
Add the grated rind of 1 lemon and mix. Add 1 egg and knead the dough until it comes together.

Press into Baking Dish:
Take a 22 cm diameter baking dish, cover with parchment paper, and press the dough with your hands until it covers the bottom and sides of the dish.
2. Prepare the Apricots
Wash and Cut Apricots:
Wash, dry, and cut 10 apricots into halves, removing the pits.
