Vegan Roasted Sweet Potato Delight ๐ŸŒฑ๐Ÿ 

Ingredients:

  • 4-5 sweet potatoes, cleaned and cut crosswise
  • Olive oil
  • Pink salt or kosher salt
  • Dried thyme
  • Baking sheet
  • Parchment paper

Instructions:

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. Place the sweet potato halves cut side up on the prepared baking sheet.
  4. Sprinkle a pinch of pink salt or kosher salt over each sweet potato half.
  5. Sprinkle dried thyme over the sweet potatoes for a flavorful touch.
  6. Generously drizzle olive oil over each sweet potato half.
  7. Using your hands, gently massage the sweet potatoes to ensure they are evenly coated with salt, thyme, and olive oil.
  8. Carefully flip the sweet potato halves, so they are cut side down on the baking sheet.
  9. Drizzle a bit more olive oil on the top side for extra flavor.
  10. Roast the sweet potatoes in the preheated oven for about 40 minutes or until the bottom side is caramelized and the sweet potatoes are tender.
  11. Once done, remove them from the oven.
