vegan Potato & zucchini fritters

Ingredients:

  • 2 medium-sized potatoes, peeled and grated
  • 1 zucchini, grated
  • 1 small onion, finely chopped
  • 1/4 cup chickpea flour (besan) or all-purpose flour
  • 2 tablespoons nutritional yeast (optional, for added flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley or cilantro (optional)
  • 2-3 tablespoons vegetable oil for frying

Instructions:

  1. Place the grated potatoes and zucchini in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible.
  2. In a large mixing bowl, combine the grated potatoes, zucchini, chopped onion, chickpea flour, nutritional yeast (if using), garlic powder, onion powder, baking powder, salt, pepper, and chopped parsley or cilantro. Mix well until all the ingredients are evenly combined.
  3. Heat the vegetable oil in a large skillet over medium heat.
  4. Scoop about 1/4 cup of the mixture and form it into a patty. Place the patty in the hot oil and flatten it with a spatula. Repeat with the remaining mixture, leaving enough space between the fritters.
  5. Cook the fritters for 3-4 minutes on each side or until they are golden brown and crispy.
  6. Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
  7. Serve the vegan potato and zucchini fritters warm with your favorite dipping sauce, such as vegan tzatziki, ketchup, or a tahini-based sauce.
