Quick Vegan Mexican Style Veggie Lasagna

Ingredients:

  • 1 package frozen spinach, thawed and drained
  • 1 cup vegan cottage cheese
  • 1 can black beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 6 thin corn tortillas
  • 2 cups salsa
  • 1 cup vegan cheese shreds

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Mix thawed spinach with vegan cottage cheese.
  3. Layer half of tortillas, beans, salsa, and spinach mixture in a greased 8-inch baking dish.
  4. Repeat layers.
  5. Top with vegan cheese shreds.
  6. Cover and bake for 25 minutes, then uncover and bake for 15 more minutes.
