Vegan Dorito Taco Salad
Ingredients:

  • 1 head of romaine lettuce, chopped
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup cooked corn kernels (fresh, canned, or frozen)
  • 1 large tomato, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1 cup crushed vegan Doritos (you can find these in health food stores or make your own using vegan tortilla chips and seasoning)
  • 1 cup vegan shredded cheese (cheddar or a Mexican blend)
  • 1 cup vegan sour cream
  • 1 cup salsa (store-bought or homemade)
  • 1 lime, cut into wedges

For the Taco Seasoning:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

For the Dressing:

  • 1/4 cup vegan mayonnaise
  • 1/4 cup unsweetened plain vegan yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon agave nectar or maple syrup
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:
1. Prepare the Taco Seasoning:

  • In a small bowl, mix together all the taco seasoning ingredients. Set aside.

2. Prepare the Dressing:

  • In another bowl, whisk together the vegan mayonnaise, vegan yogurt, lime juice, agave nectar (or maple syrup), ground cumin, salt, and pepper. Adjust seasoning to taste. Set aside.

3. Assemble the Salad:

  • In a large serving bowl, layer the chopped romaine lettuce.
  • Sprinkle the cooked black beans and corn over the lettuce.
  • Add diced tomato, chopped red onion, diced avocado, sliced black olives, and chopped cilantro.
  • Sprinkle the prepared taco seasoning evenly over the salad.
  • Drizzle the dressing over the salad, distributing it evenly.

4. Top with Crunchy Doritos and Vegan Cheese:

  • Sprinkle the crushed vegan Doritos over the salad, ensuring even coverage.
  • Scatter the vegan shredded cheese on top.

5. Serve:

  • Serve the salad immediately, with vegan sour cream, salsa, and lime wedges on the side.
  • Allow everyone to mix their own salad to incorporate the flavors and enjoy!

Tips:

  • You can customize this salad by adding other ingredients such as diced bell peppers, shredded carrots, or sliced jalapeños.
  • If you want to make it spicy, add some hot sauce or extra crushed red pepper flakes to the dressing.
  • Store leftovers (without the Doritos and dressing) in an airtight container in the refrigerator for up to 2 days.
