Vegan Cabbage Soup

Vegan Cabbage Soup

Ingredients:

  • 1 head of green cabbage, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 4 cloves of garlic, minced
  • 1 can of diced tomatoes (14.5 oz)
  • 4 cups of vegetable broth
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook for 5-7 minutes, or until the vegetables are soft and fragrant.
  2. Add the cabbage to the pot and cook for another 5 minutes, stirring occasionally.
  3. Add the diced tomatoes, vegetable broth, thyme, oregano, paprika, salt, and pepper to the pot. Stir to combine.
  4. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the cabbage is tender.
  5. Taste and adjust the seasoning as needed. Serve hot, garnished with fresh parsley if desired.
