  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Prepare Cheese Mixture: In a mixing bowl, combine 1/3 cup ricotta, 1 cup mozzarella, 1/4 cup Parmesan, beaten egg, 2 teaspoons minced parsley, 1/2 teaspoon pesto, 1/2 teaspoon garlic powder, salt, and pepper. Mix thoroughly.
  3. Prepare Baking Dish: Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
  4. Assemble Roll-Ups:
    • Place cooked lasagna noodles on a clean surface.
    • Spread about 2 teaspoons of the cheese mixture on each noodle.
    • Top with about 2 teaspoons of cooked sausage.
    • Carefully roll up each noodle and place it seam-side down in the prepared baking dish.
  5. Add Sauce and Cheese:
    • Pour the remaining marinara sauce evenly over the roll-ups.
    • Sprinkle the remaining Parmesan and mozzarella cheese on top.
  6. Bake: Cover the baking dish with foil and bake for 25 minutes.
    • Remove the foil and continue baking for an additional 10 to 15 minutes, or until the cheese is bubbly and golden.
  7. Cool and Serve: Let the roll-ups cool for a few minutes before cutting and serving.
