  • ½ cup of honey
  • A splash of soy sauce (¼ cup should do it)
  • 2 tsp of salt
  • 3 cloves of garlic, minced
  • 2 cups of fresh pineapple, diced into happy little chunks
  • Optional: A pinch of crushed red pepper flakes for a bit of spice

Directions:

  1. Start by warming up some olive oil in a pan over medium heat. Brown that pork loin roast on all sides to lock in those tasty juices.
  2. Pop the browned pork into your slow cooker and scatter the sliced onion around it. (Tip: Feel free to give the onions a quick sear too, if you’re feeling fancy.)
  3. Grab a bowl and mix together the apple cider vinegar, soy sauce, honey, brown sugar, garlic, salt, and red pepper flakes (if you’re using them) to make a zesty marinade.
  4. Drizzle that marinade all over the pork and onions in the slow cooker. Make sure every inch of that roast is lovingly coated.
  5. Toss in the pineapple chunks, spreading them around the pork like little bursts of sunshine.
  6. Cover it up and set it to cook on low for 6-8 hours or high for 4-5 hours, until the pork is so tender it practically melts.
  7. Optional step: If you like your sauce thick, whisk in a cornstarch slurry near the end of cooking.
  8. Serve this beauty as is with that thickened gravy, or shred it up for some seriously gourmet sandwiches.
