Ingredients

  • 1 sheet of puff pastry
  • 2 leeks, cleaned and sliced
  • 200g salmon fillet, skin removed and sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp honey
  • 1 tsp thyme leaves
  • Salt and pepper to taste
  • Juice of 1/2 lemon

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat the olive oil and butter over medium heat. Add the sliced leeks and cook until softened, about 10 minutes. Season with salt, pepper, and thyme.
  3. In a separate pan, cook the salmon slices for about 2-3 minutes per side until slightly cooked. Season with salt, pepper, and lemon juice. Set aside.
  4. In a tart pan or ovenproof skillet, spread the honey evenly on the bottom. Arrange the cooked leeks and salmon slices on top.
  5. Cover with the puff pastry, tucking in the edges around the filling.
  6. Bake in the preheated oven for 25-30 minutes or until the pastry is golden and puffed.
  7. Remove from the oven and let cool for a few minutes before inverting onto a serving plate.
  8. Serve warm and enjoy your Tarte Tatin Saumon & Poireau!
