How to Make Spectacular Pork Lomo with Balsamic Vinegar and Rosemary
Ingredients:

  • 2 1/2 kg pork loin
  • 16 cambray potatoes, cut in half
  • 12 cup cambray onions
  • 4 sprigs of rosemary
  • Salt and pepper to taste
  • 6 cloves of garlic, cut into slices
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil

Directions:

  1. Boil the potatoes in salted water for 8 minutes, then drain and place them in ice water to cool for 30 minutes.
  2. Prepare the pork loin by making incisions and stuffing them with garlic slices and rosemary leaves. Season with salt and pepper.
  3. Sear the pork loin in a hot pan with olive oil until golden brown.
  4. Mix the potatoes and onions with salt, pepper, balsamic vinegar, rosemary leaves, and olive oil.
  5. Line a baking tray with aluminum foil, grease with olive oil, place the pork loin in the center, and surround it with the potato and onion mixture. Pour the remaining marinade over the pork loin.
  6. Bake at 220°C for 35 minutes, or until the internal temperature reaches 71°C. If needed, bake the potatoes for an additional 15 minutes.
