Directions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Spread the diced potatoes on the prepared baking sheet. Drizzle with olive oil and season generously with salt and pepper. Toss to coat evenly.
Bake in the preheated oven for 25-30 minutes, or until potatoes are golden brown and crispy, flipping halfway through.
While the potatoes are baking, heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles with a spatula, about 7-10 minutes.
Add the chopped onion and minced garlic to the skillet with the beef. Continue to cook until the onion is soft and translucent, about 3 minutes.
Stir in the taco seasoning and water. Reduce heat to low and let simmer for 5 minutes, stirring occasionally.
Once the potatoes are done, remove them from the oven and divide among four bowls.
Top each bowl of potatoes with the seasoned ground beef. Sprinkle shredded cheddar cheese over the beef evenly.
Garnish with shredded lettuce, diced tomatoes, a dollop of sour cream, and chopped fresh cilantro.
Serve immediately and enjoy your delicious Cheesy Taco Potato Bowls!

For a spicier kick, consider adding some diced jalapeños or a sprinkle of red pepper flakes to the beef mixture.
