Directions

Preheat your oven to 400°F (200°C). Prepare a standard 12-cup muffin tin by lightly greasing each cup.
Place 3-4 tater tots in each muffin tin cup. Press them down to form a base. Bake for 10 minutes.
While the tots are baking, brown the ground beef in a skillet over medium heat. Drain any excess fat.
Add the taco seasoning and water to the beef. Stir well and let it simmer on low until thickened, about 5 minutes.
Remove the tater tots from the oven and press them down again to form a firmer base. Divide the taco meat evenly among the tater tot cups.
Sprinkle shredded cheddar cheese on top of each cup. Return the muffin tin to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
Once baked, remove from the oven and let the tater tot taco cups cool slightly. Top with diced tomatoes, green onions, a dollop of sour cream, and cilantro if desired.
 

Carefully remove the cups from the muffin tin and serve warm.
Variations & Tips
Feel free to customize these taco cups to your family’s preferences. Swap out the ground beef for turkey or a plant-based meat substitute for a different spin. Add black beans or corn to the taco meat mix for extra texture and flavor. For a spicier kick, mix in some diced jalapeños or hot sauce. Vegetarians can enjoy these with a mix of beans, corn, and bell peppers instead of meat.
