Slow Cooker Chicken Bacon Ranch Sandwiches

These sandwiches are the ultimate comfort food, combining tender slow-cooked chicken, creamy ranch seasoning, crispy bacon, and melted cheddar cheese. An easy slow cooker recipe that’s perfect for busy weeknights or lazy weekends.

Ingredients

  • 1-2 lbs boneless skinless chicken breasts
  • 16 ounces cream cheese cubed
  • 2 tablespoons ranch seasoning mix or 1 packet
  • 2 cups cheddar cheese shredded
  • 12 slices bacon cooked and chopped
  • 4 scallions chopped
  • Buns for serving

Instructions

  • Place the chicken breasts in the basin of a 6-quart slow cooker.
  • Sprinkle ranch seasoning mix evenly over the chicken.
  • Arrange cubed cream cheese on top of the chicken.
  • Cover and cook on LOW for 6 hours or on HIGH for 4 hours, until chicken is cooked through and tender.
  • Once cooked, shred the chicken with two forks and stir to combine with the creamy sauce.
  • Add chopped bacon, scallions, and 1 1/2 cups of shredded cheddar cheese, stirring until well mixed.
  • Sprinkle remaining shredded cheddar cheese over the top and cover for an additional 10 minutes, allowing the cheese to melt.
  • Serve the chicken bacon ranch mixture on buns and enjoy!

Notes

For a spicier kick, add a few dashes of hot sauce or a pinch of red pepper flakes to the chicken mixture before cooking.
