Seriously the best! My hubby’s fave soup of all time!

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
Salt and pepper to taste
1 baguette, sliced into 1-inch pieces
2 cups shredded Gruyère cheese

Directions
1. In a large pot, melt butter with olive oil over medium heat.
2. Add the sliced onions and sugar, cook for about 25-30 minutes, stirring occasionally until the onions become golden brown and caramelized.
3. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.
4. Add the beef broth, bay leaf, thyme, salt, and pepper. Bring the soup to a boil, then reduce heat and let it simmer for about 20 minutes.
5. Preheat your oven’s broiler. Arrange the baguette slices on a baking sheet and broil until they are crispy and golden, about 1-2 minutes per side.
6. To serve, ladle the soup into oven-safe bowls. Place a slice or two of toasted baguette on top of each bowl, then sprinkle generously with shredded Gruyère cheese.
7. Place the bowls on a baking sheet and broil for 3-5 minutes, or until the cheese is bubbly and golden brown. Keep an eye on it to prevent burning.

8. Carefully remove from the oven and allow to cool for a minute before serving. Enjoy your warm, comforting French Onion Soup!
