RIDICULOUSLY EASY PEACH COBBLER

Winter can be a challenging time for fruit lovers. With the limited availability of in-season fruits, aside from certain citrus varieties, most fruits at the supermarket tend to be pricier and of lower quality. This isn’t an ideal situation for anyone craving fresh, juicy produce. So, what’s a fruit enthusiast to do?

The answer lies in discovering as many baked goods as possible that utilize either frozen or canned fruit. While frozen fruit is a convenient and reliable option for many baking recipes, canned fruit can also be a wonderful ingredient. Despite the common misconception that canned fruit is of lower quality, it can actually be just as good, if not better, in certain dishes.

I recently came across a recipe for peach cobbler that uses canned peaches and a few pantry staples. Intrigued and ready to overcome my bias against canned fruit, I decided to give it a try. The results were delightful, proving that canned fruit can be a valuable addition to your winter baking repertoire.
Ingredients:

  • 3 (15-ounce) cans of sliced peaches
  • 6 tablespoons unsalted butter, melted
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup milk
