Raspberry Raisin Pastries

    • 1 egg yolk
  • For the Filling:
    • 200g Greek yogurt
    • 150g raisins

Instructions:

  • Prepare the Dough: In a large bowl, mix together the flour, cornstarch, and a pinch of salt. Add the raspberry oil (or butter) and mix until the mixture resembles coarse crumbs. Stir in the sour creams and egg yolk until a dough forms. If the dough is too sticky, add a little more flour.
  • Make the Filling: In a separate bowl, mix together the Greek yogurt and raisins.
  • Assemble the Pastries: Preheat your oven to 180°C (356°F) and line a baking sheet with parchment paper. Roll out the dough on a floured surface to about 1/4 inch thickness. Cut the dough into squares or circles using a cookie cutter. Place a spoonful of the yogurt and raisin filling in the center of each dough piece. Fold the dough over the filling to create a half-moon shape, and press the edges to seal.
  • Bake: Place the pastries on the prepared baking sheet and bake for 15-20 minutes, or until they are golden brown.
  • Serve: Let the pastries cool for a few minutes before serving. Enjoy the quick and delicious raspberry pastries that are sure to disappear in no time!
