Overheard that these are the Grinch’s most favorite cookies of all time! No joke! Sinfully good I must say!

Instructions:

1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the white cake mix, softened butter, room-temperature eggs, peppermint or mint extract, and vanilla extract. Mix until a dough forms. (A hand mixer helps here)
3. Add green gel food coloring to the dough until you achieve the desired Grinch-green color. Mix on low speed as batter should be thick and sticky.
4. In a separate small bowl, mix together the powdered sugar and cornstarch.
5. Roll the dough into small balls, then roll each ball in the powdered sugar-cornstarch mixture.
6. Place the coated dough balls on a baking sheet lined with parchment paper, spacing them a couple of inches apart. Flatten each dough ball slightly with your hand.
7. Bake for 10-12 mins until edges appear dry.
8. Press a red heart-shaped sprinkle into each cookie to resemble the Grinch’s heart. Make sure to do this quickly as cookies come out so heart sticks to cookie.

Let cookies cool on wire rack.
Once cooled, your Grinch Cookies are ready to be enjoyed!
