Once you try this, you won’t eat eggs any other way!

Directions
1. Heat the olive oil in a non-stick skillet over medium heat. You want a pan that’s good friends with your spatula because, believe me, non-stick is a must for that golden feta.
2. Carefully add the crumbled feta to the pan and let it fry slightly until it’s starting to get crispy—about 2 minutes. This is where the magic starts!
3. Crack the eggs over the feta, giving them enough room to breathe. Season with the black pepper and, if you like a little heat, those optional red pepper flakes.
4. Cook the eggs to your preferred doneness. I am a firm believer in a runny yolk, but you do you! About 3 to 4 minutes will give you a nice soft yolk.
5. Using a spatula, gently slide the eggs and crispy feta onto plates. You want to keep all that crispy goodness intact.
6. Garnish with fresh herbs, imparting a herby bright note that cuts through the richness of the dish.

Variations & Tips
– Feel adventurous? Swap out feta for halloumi for a different taste and texture.
– If you’re extra hungry, try adding a layer of spinach or kale to the pan before adding the eggs. The greens will wilt nicely underneath.
– For a truly picturesque dish, sprinkle the finished eggs with a few edible flowers.
