Oh man, I cooked this for a party, and it vanished before I knew it!

Instructions:

    1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
    2. Whisk together flour, baking powder, salt, and baking soda in a large bowl.
    1. Cut in cold butter until mixture resembles coarse crumbs.
  1. Pour in buttermilk and stir until dough comes together.
  2. Knead dough gently on a floured surface.
  3. Pat dough into a 1/2-inch thick rectangle. Cut into 12 equal squares.
  4. Place a mozzarella cube in the center of each square. Fold dough around it, pinching seams to seal.
  5. Arrange biscuit bombs seam-side down on the prepared baking sheet.
  6. Brush tops with melted butter and sprinkle with garlic powder.
  7. Bake for 15-18 minutes, or until golden brown and cheese is melted.
  8. Brush with remaining melted butter and sprinkle with fresh parsley. Serve warm.
