Instructions:

- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Whisk together flour, baking powder, salt, and baking soda in a large bowl.

- Cut in cold butter until mixture resembles coarse crumbs.
- Pour in buttermilk and stir until dough comes together.
- Knead dough gently on a floured surface.
- Pat dough into a 1/2-inch thick rectangle. Cut into 12 equal squares.
- Place a mozzarella cube in the center of each square. Fold dough around it, pinching seams to seal.
- Arrange biscuit bombs seam-side down on the prepared baking sheet.
- Brush tops with melted butter and sprinkle with garlic powder.
- Bake for 15-18 minutes, or until golden brown and cheese is melted.
- Brush with remaining melted butter and sprinkle with fresh parsley. Serve warm.
