Instructions:

  1. Preheat your oven to 400 degrees F.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
  3. Add the chicken thighs skin side down and season with salt and pepper. Sear for 2-3 minutes on each side until browned. Remove from the skillet.
  4. In the same skillet, add the chopped onion and garlic cloves. Sauté for 2-3 minutes until softened and browned.
  5. Add 1 teaspoon of thyme and stir until fragrant.
  6. Pour in 1 cup of bone broth.
  7. Whisk in 3 tablespoons of heavy whipping cream.
  8. Gradually add the parmesan cheese, whisking quickly to combine.
  9. Return the chicken thighs to the skillet with the sauce.
  10. Place the skillet in the oven and roast for 15-20 minutes, or until the chicken is cooked through.
  11. Spoon the sauce over the chicken thighs and serve topped with fresh parmesan or herbs.
