Mississippi Mud Potatoes are a creamy, cheesy potato casserole, perfect as a comfort food side dish.

Cheddar cheese
1 cup, shredded

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Prepare potatoes: Wash, peel, and dice potatoes into bite-sized pieces.
  3. Cook bacon: Cook bacon until crispy, then crumble.
  4. Prep vegetables: Mince garlic and finely chop onion.
  5. Combine ingredients: In a large bowl, mix potatoes, garlic, onion, crumbled bacon, and mayonnaise.
  6. Transfer to baking dish: Spread potato mixture evenly in a greased baking dish.
  7. Bake: Cover with foil and bake for 45 minutes, or until potatoes are tender.
  8. Add cheese: Remove foil, sprinkle with cheddar cheese.
  9. Melt cheese: Bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
  10. Serve: Let cool slightly, garnish with bacon and parsley if desired. Serve hot.
