Mexican Cornbread Casserole

Ingredients

  • 1 8.5 oz box cornbread mix
  • 1/3 cup milk
  • 1 egg
  • 1 4 oz can chopped green chilies, drained
  • 1 lb ground beef
  • 1 1 oz package taco seasoning mix
  • 1/2 cup water
  • 1 15 oz can whole kernel corn, drained
  • 1 15 oz can black beans, rinsed and drained
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  • In a bowl, combine cornbread mix, milk, and egg. Stir in green chilies. Spread the batter in the bottom of the prepared baking dish.
  • In a skillet, cook ground beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Simmer for 5 minutes.
  • Spoon the beef mixture over the cornbread layer. Top with corn and black beans.
  • Sprinkle with shredded cheese.
  • Bake for 25-30 minutes, or until the edges are golden brown and the cheese is melted.

Notes
Ensure ground beef is cooked thoroughly before adding taco seasoning.
