Lazy Pecan Pie Bars

Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • ⅓ cup light brown sugar packed
  • ¼ teaspoon salt
  • ½ cup unsalted butter cold and cubed

For the Filling:

  • ½ cup corn syrup
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon melted butter
  • 1½ cups chopped pecans

Instructions

Preheat Your Oven

  • Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang on the sides.

Prepare the Crust

  • Mix together the flour, brown sugar, and salt. Add cold, cubed butter and blend until the mixture resembles coarse crumbs. Press it into the bottom of the prepared pan. Bake for 15 minutes, or until lightly golden.

Make the Filling

  • Whisk together corn syrup, sugar, eggs, vanilla, and melted butter until smooth. Stir in chopped pecans. Pour the filling evenly over the hot crust.

Bake the Bars

  • Bake for 20-25 minutes, until the filling is set with a slight jiggle. Let the bars cool completely in the pan.

Cool and Cut

  • Once cool, lift the bars out using the parchment paper and cut into squares. Dust with powdered sugar, if desired.

Notes

Substitute half the pecans with walnuts or almonds for a different flavor. For a gluten-free option, use a gluten-free all-purpose flour blend.
