Irresistible Coconut Layer Dessert
- Add Flavor: Once the mixture has thickened, remove it from the heat and stir in 1 teaspoon of vanilla extract and 1 cup of shredded coconut.
- Cool: Set the coconut cream aside to cool.
Prepare the Whipped Cream Layer
- Beat the Cream: In a large mixing bowl, beat 1 cup of heavy cream until soft peaks form.
- Add Sugar and Cheese: Add 1/2 cup of powdered sugar and 1/2 cup of softened cream cheese to the whipped cream.
- Mix Until Smooth: Continue to beat the mixture until it becomes smooth and creamy.
Assemble the Dessert
- Layer Coconut Cream: In a rectangular glass dish, begin by spreading a thin layer of the coconut cream at the bottom.
- Add Biscuits: Place a layer of ladyfinger biscuits over the coconut cream, ensuring to cover the entire bottom of the dish.
- Repeat Layers: Spread a generous layer of coconut cream over the biscuits, making sure to cover them completely. Add another layer of ladyfinger biscuits over the coconut cream.
- Add Whipped Cream: Spread the whipped cream mixture over the second layer of biscuits, ensuring it’s evenly distributed.
- Continue Layering: Continue layering until all the ingredients are used, finishing with a layer of whipped cream on top.
Top with Shredded Coconut
- Sprinkle Coconut: Sprinkle the remaining 1 cup of shredded coconut over the top layer of whipped cream.
- Optional Toasting: For a more toasted coconut flavor, you can toast the shredded coconut in a dry skillet over medium heat until it’s golden brown before sprinkling it over the dessert.
Chill and Serve
- Refrigerate: Cover the dessert with plastic wrap and refrigerate for at least 4 hours or overnight. This will allow the flavors to meld together and the layers to set properly.
- Serve: Once chilled, cut the dessert into squares and serve. Enjoy the creamy, coconutty goodness with each bite!
