Ingredients:

1½ pounds (about 3) thin-skinned round white potatoes.

One large sweet onion.

Salt.

One tbsp. vegetable oil.

Two tbsps. of butter.

Directions:

Step 1

To begin, place a heavy 10-inch skillet over medium heat.

Step 2

Next, slice the potatoes and onions into thin slices. Sprinkle them with salt. Then, add the vegetable oil and butter to the skillet.

Step 3

Once the butter in the skillet becomes foamy, carefully add the sliced potatoes and onions to the pan.

Step 4

Cover the potatoes and onions in the skillet by placing a plate on top, and then use something heavy such as a sack of flour or heavy cans to weigh it down.

Step 5

Allow the potatoes and onions to cook undisturbed, letting them develop a crispy peel on the bottom side.

Step 6

Continue sautéing the potatoes and onions for approximately 20 minutes, or until they turn golden brown and develop a delightful crispiness.
