For something refreshing, toss together a simple green salad with sliced cucumber, radish, and a splash of vinaigrette. If your family isn’t strictly low carb, you might even add a warm loaf of crusty bread for those who’d like to soak up any extra ranch sauce.

Low Carb Chicken Bacon Ranch Sheet Pan With Roasted Broccoli
Servings: 4 Servings

Ingredients

– 4 medium chicken breasts, boneless and skinless
– 1 tablespoon ranch seasoning mix (store-bought or homemade)
– 8 slices of bacon, cut into 1-inch pieces
– 1 large head of broccoli, cut into florets
– 2 tablespoons olive oil
– Salt and pepper, to taste
– Optional: 1/2 cup shredded cheddar cheese for topping

Directions

1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
2. In a large bowl, toss the broccoli florets with 1 tablespoon of olive oil, a sprinkle of salt and pepper, and half of the ranch seasoning mix. Spread the florets out on one side of the sheet pan in a single layer.
3. Next, place the chicken breasts on the other side of the pan. Drizzle the remaining olive oil over the chicken and sprinkle the rest of the ranch seasoning mix on top, making sure each breast is well-coated.
