Duck Breast Stuffed with Foie Gras on Morello Cherry Coulis

Instructions

  1. Prepare the Duck Breasts: Trim any excess fat from the duck breasts. Make a horizontal cut in the middle of each duck breast to create a pocket for the foie gras.
  2. Stuff the Duck Breasts: Cut the foie gras into slices and stuff them into the pockets of the duck breasts. Use kitchen twine to tie the duck breasts and keep the foie gras inside.
  3. Cook the Duck Breasts: In a large skillet, sear the duck breasts on both sides until they are golden brown. Season with salt and pepper. Transfer to a baking dish and bake in a preheated oven at 180°C (350°F) for about 15-20 minutes, or until cooked to your liking.
  4. Prepare the Morello Cherry Coulis: In a saucepan, combine the morello cherries, honey, and balsamic vinegar. Cook over medium heat until the cherries are soft and the sauce has thickened slightly, about 10-15 minutes. Blend the mixture until smooth, then strain to remove any solids. Season with salt and pepper to taste.
  5. Serve: Remove the kitchen twine from the duck breasts and slice them. Serve the duck slices on a plate and drizzle with the morello cherry coulis. Garnish with fresh thyme if desired.
