CREAMY BURRITO CASSEROLE

Ingredients:

  • 1 lb ground beef
  • 1/2 onion, finely chopped
  • 1 package taco seasoning
  • 6 large flour tortillas
  • 1 can refried beans
  • 2 – 3 cups shredded mild Cheddar cheese
  • 1 can condensed cream of chicken soup (undiluted)
  • 4 ounces sour cream
  • Fresh cilantro, for garnish (optional)

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.
  2. In a skillet over medium heat, brown the ground beef and chopped onion until the beef is no longer pink. Drain any excess fat.
  3. Add the taco seasoning to the beef mixture, stirring until well combined. Then, stir in the refried beans, allowing the mixture to simmer for a few minutes. Remove from heat and set aside.
  4. In a separate bowl, mix together the condensed cream of chicken soup and sour cream until smooth.
  5. Spread half of the sour cream mixture evenly over the bottom of the prepared baking dish.
  6. Tear three of the flour tortillas into bite-sized pieces and layer them over the sour cream mixture in the baking dish.
  7. Spoon half of the beef and bean mixture on top of the tortilla layer, spreading it out evenly.
  8. Sprinkle a generous layer of shredded Cheddar cheese over the beef mixture.
  9. Repeat the layers: torn tortillas, remaining beef and bean mixture, and another layer of shredded cheese.
  10. Finally, pour the remaining sour cream mixture over the top layer and spread it out evenly.
  11. Sprinkle additional shredded cheese over the top of the casserole, ensuring it’s well covered.
  12. Bake the casserole in the preheated oven for 20-30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  13. Once baked, remove the casserole from the oven and let it cool for a few minutes before serving.
  14. Garnish with fresh cilantro, if desired, before serving.
