Cilantro-Lime Pasta Salad…..

Ingredients:
8 oz (about 225g) rotini or your favorite pasta
1/2 cup chopped fresh cilantro
1/4 cup fresh lime juice (approximately 2 limes)
1/4 cup olive oil
1 clove garlic, minced
1 teaspoon honey or maple syrup (optional, for sweetness)
Salt and pepper to taste
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1 bell pepper, diced (any color you prefer)
1 cup corn kernels (fresh, frozen, or canned)
1/2 cup crumbled feta cheese (optional)
Instructions:
Cook the pasta according to package instructions. Drain and let it cool.
In a small bowl, whisk together the lime juice, olive oil, minced garlic, honey (if using), salt, and pepper to create the dressing.
In a large mixing bowl, combine the cooked pasta, chopped cilantro, cherry tomatoes, red onion, bell pepper, and corn.
Pour the dressing over the pasta and vegetables. Toss everything together until well coated.
If using, sprinkle crumbled feta cheese on top.
Refrigerate the pasta salad for at least 30 minutes before serving to allow the flavors to meld.
Before serving, you can adjust the seasoning if needed. You may want to squeeze a bit more lime juice or add extra salt and pepper according to your taste.
