Beef Birria Tacos

Directions: 

Step 1: Prepare the Meat 

Season the beef shank and bone-in short ribs with salt and pepper.
Place the meat in a large baking dish, ensuring it has enough space. 

Step 2: Prepare the Peppers 

Clean and devein the Ancho and Guajillo peppers.
Slightly toast the peppers over medium heat. Be careful not to burn them, as burnt peppers can add a bitter taste to the dish.
Soak the toasted peppers in a cup of hot water for 20 minutes until softened. 

Step 3: Create the Sauce 

Roast the onion and garlic until they develop a light char and set them aside.
Toast the whole cloves, cumin seeds, and black peppercorns in a pan for a few seconds.
Add the roasted tomatoes, onion, garlic, toasted spices, Mexican oregano, marjoram, cinnamon stick, and white vinegar to a blender. 

Step 4: Blend the Sauce 

Once the peppers are soft, drain them and add them to the blender.
Blend all the ingredients until you achieve a smooth sauce. Add a few tablespoons of water if needed to help the blender process the ingredients.
Season the sauce with salt to taste. 

Step 5: Marinate the Meat 

Pour the blended sauce over the meat, ensuring all sides are fully covered.
Cover the dish with aluminum foil and refrigerate for at least 4 hours or overnight to allow the meat to absorb all the flavors. 

Step 6: Cook the Meat 

Preheat your oven to 350ºF (177ºC).
Bake the meat in the covered dish for 4 hours, or until the meat is tender enough to pull apart with a fork. 

Step 7: Make the Tacos 

Dip the corn tortillas into the consomé (the sauce the meat cooked in).
Place the dipped tortillas on a hot skillet, sprinkle them with Oaxacan cheese, and add shredded beef.
Cook the tacos until the cheese is melted and the tortillas are crispy. 

Step 8: Serve with Consomé 

Reserve a cup of the consomé to serve as a dipping sauce for the tacos. 

Instant Pot Option:
Combine all the ingredients in an Instant Pot and cook on the stew setting for 50 minutes.
Allow a 10-minute natural release, then quick release the remaining pressure.
