Baked Greek Lemon Chicken

Bake the chicken for about 40 minutes, or until the internal temperature reaches 165-175 degrees fahrenheit, ensuring the meat is cooked through but still nice and juicy. Ingredients

8 boneless, skinless chicken thighs
Juice of 2 lemons
¼ cup olive oil
4 cloves garlic, minced
3 teaspoons dijon mustard
3 teaspoons oregano
2 teaspoons thyme
1 teaspoon dill
1 teaspoon paprika
2-3 teaspoons salt
1 teaspoon black pepper
Preparation
Place chicken in a large bowl or ziplock bag.
In a small bowl, mix together all remaining ingredients until well combined.
Pour the marinade over the chicken and cover or seal bag.
Place in fridge to marinate for 2-6 hours.
When ready to bake: Preheat oven to 350 degrees F.

Arrange marinated chicken in a large baking dish and pour marinade over the top.
Bake chicken for 40 minutes or until internal temperature reaches 165-175 degrees F. Broil for the last 2-3 minutes for extra color.
