As soon as I saw this recipe, I just knew I needed to try it. It did not disappoint!

Salt and pepper to taste
1 lemon, cut into wedges for serving

Directions
1. In a medium bowl, combine the parsley, garlic, olive oil, red wine vinegar, oregano, and red pepper flakes (if using). Mix well to create the chimichurri sauce and season with salt and pepper to taste.
2. Reserve about 1/4 cup of the chimichurri sauce for later use. Add the shrimp to the remaining sauce and toss to coat. Let the shrimp marinate for at least 15 minutes to absorb the flavors.
3. Preheat a grill or grill pan over medium-high heat. Once hot, add the shrimp to the grill and cook for 2-3 minutes per side, or until the shrimp are opaque and slightly charred.
4. Transfer the cooked shrimp to a serving platter and drizzle with the reserved chimichurri sauce.
5. Serve immediately with lemon wedges on the side.

Variations & Tips
For a spicier kick, add more red pepper flakes to the chimichurri sauce. If you prefer a milder flavor, omit them altogether. You can also incorporate other fresh herbs such as cilantro or mint into the chimichurri for a different twist. For a vegetarian option, substitute the shrimp with grilled vegetables like bell peppers, zucchini, and mushrooms. This dish can also be served over pasta or rice for a more substantial meal.
