APPLE PIE ENCHILADAS

Ingredients
Homemade apple pie filling or 1 (21-ounce) can of apple pie filling

6 (8-inch) flour tortillas

1 teaspoon ground cinnamon, plus more for topping

1/2 cup butter

1/2 cup white sugar

1/2 cup brown sugar

1/2 cup water
Instructions
1. Prepare the Oven and Baking Dish
Start by preheating your oven to 350°F (175°C). This is the ideal temperature for ensuring the enchiladas bake evenly and develop a beautiful golden-brown crust. Generously butter a 9 x 13-inch baking dish to prevent sticking and add a touch of flavor to the finished dish.
2. Warm the Tortillas
If you’re using store-bought tortillas, warm them slightly to make them more pliable. You can do this by microwaving them for 10-15 seconds, or by heating them in a dry skillet over medium heat for about 30 seconds on each side. Warm tortillas are easier to roll and less likely to tear.
3. Assemble the Enchiladas
Lay out each tortilla on a clean surface. Spoon about 1/4 cup of apple pie filling off-center on each tortilla. If you’re using homemade apple pie filling, make sure it’s cooled to room temperature for easier handling. Sprinkle a dash of ground cinnamon over the apple filling. This adds an extra layer of aromatic spice and complements the apples beautifully.
