Easy Strawberry Cookies

These Easy Strawberry Cookies are made with fresh strawberries and baked in 15 minutes. One bowl, no beaters necessary, soft, delicious cookies. The perfect summertime cookie recipe. Sprinkle a little powdered sugar or drizzle with melted chocolate to make them extra special.
Ingredients

  • 1 egg
  • 2 tablespoons lemon juice
  • 1/2 cup vegetable oil (100 grams)
  • 1/2 teaspoon vanilla
  • 1/2 cup + 2 tablespoons granulated sugar (112 grams)
  • 1 3/4 cups all-purpose flour (227 grams)
  • 1 1/2 teaspoons baking powder
  • 1 cup chopped strawberries (140 grams)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the egg, lemon juice, vegetable oil, and vanilla until well combined.
  3. Add the granulated sugar to the mixture and whisk until the sugar is dissolved and the mixture is smooth.
  4. In the same bowl, add the all-purpose flour and baking powder. Use a spatula to mix until just combined.
  5. Gently fold in the chopped strawberries until evenly distributed throughout the dough.
  6. Using a cookie scoop or spoon, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the cookies are set.
  8. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Optional: Sprinkle the cooled cookies with powdered sugar or drizzle with melted chocolate for an extra special touch.
