Selecting and Preparing Your Pomegranates Choose ripe pomegranates that feel heavy for their size—these are usually juicier. The skin should be dark red and slightly firm. Before juicing, clean the fruit under running water to remove any impurities.

Extracting the Seeds (Arils)

  1. Cutting the Fruit: Slice off the crown of the pomegranate, then lightly score the skin in quarters. Be careful not to cut too deeply, as this might burst the seeds.
  2. Opening the Fruit: Over a bowl of water, gently break the pomegranate apart along the scored lines. This helps to minimize juice loss and mess.
  3. Removing the Seeds: Submerge the pomegranate quarters in the bowl of water and roll out the arils with your fingers. The seeds will sink to the bottom, while the white membrane floats. Remove and discard the floating pieces.
